this one is so fun because it brings a bit of variety to our afterschool snack lineup + does it with vegetables!! biggest surprises: it looks a lot easier to put together than it was in reality. on the bright side, i thought it would take a lot longer than it did–so those are the pros/cons with this guy!

as with all of our boards, think of this as a starting point then feel free to make it your own! the inspiration this included mushrooms + cauliflower, but i wasn’t able to get those ingredients this week, so i prepared each veggie i had in a way that made sense for each “bone” lol. i definitely had a moment or two that sent me back to those few anatomy lessons from that one semester i studied biology in college– you nurses + doctors amaze me!!

we also enjoyed some witch fingers alongside the veggies for a little contrast to all those crunchy green cruciferous choices.

building blocks:
(serves 4-6)

handful arugula/spinach
handful broccoli florets
1 cucumber, sliced two ways
1 carrot
1 red pepper
1-2 olives
vegetable dip such as hummus, ranch, toum, garlic aioli

a few additions that would be right at home on this board:
cauliflower
green peppers
cherry tomatoes
+ any of your favorite vegetables!

directions: 
(5-10 minutes)

wash all produce, peel cucumber + carrots
slice 2/3 cucumber in circles, reserving 1/3 for sliced pieces
cut carrots into thirds, then slice
cut florets from broccoli head
seed + slice red peppers
slice olives
place a bowl with hummus or other vegetable dip near top of board
place handful of arugula/spinach in a semicircle around dip
place broccoli florets with greens
add prepared vegetables to create a skeleton shape

serve it up: once everything is on the board, it’s ready to eat! place all extra veggies into a bowl for easy-grab seconds.
add a few crackers, flatbreads or witch fingers as desired
