cucumber ghosts

here’s a recipe for creating cucumber ghosts, a healthy anytime snack for your kids this fall! serve afterschool or in their lunchbox as a frightfully delicious surprise. cucumber ghosts can be enjoyed with hummus or cheese spread, alongside crackers or plain, making them a special snack for toddlers and parents to share. this time, we served ours with some leaf shaped tortilla chips + hummus to add a bit more protein to hold us over until supper.

building blocks:
(serves 2)
1 cucumber
1 paper straw

directions: 
(3-5 minutes)

1. to start, peel the cucumber skin off lengthwise with a veggie peeler in stripes or entirely depending on your preference; we enjoy peeling as it softens the texture –recommended for first time cucumber tasters!

2. cut cucumber in half (widthwise) + slice lengthwise; (think about the shape of ghosts)

3. use one end of paper straw to “cut” two eyes + mouth in the cucumber; to create more of an oval shape begin this step by squishing the straw’s end into an oval.

4. cut triangles out of the bottom of each slice to create a ghostly appearance on each.
