whenever we hear genuine interest or meal suggestions from our kids, we listen! it’s still rare that they want to help contribute to what our family might eat week after week. while it may be uncommon, we have found that allowing them an opportunity to chime-in on these family plans is a great way to get them more involved in learning how to make good, healthy choices. having said that, our most frequently heard meal request from our kids (second to pizza) is a board- this is always music to our ears + also why it is a mainstay on our weekly meal plan.
our youngest is the main creator of this week’s board; she asked for hard boiled eggs to build the board around, which is a notable improvement for her eating habits as of late. she’s hit the inevitable school year burnout on pb&j sandwiches, no matter how creatively we have tried to spin those for her. hearing this request, i was thrilled because i know she will enjoy eggs in her lunchbox now as well. hooray!!



we love this board for all the protein + fresh fruit plus, most of these items are whole foods, which always makes me feel like we’re winning as parents. i know that i feel better eating foods that can be found mostly in nature + on our table with minimal processing, so sharing these kinds of foods with our kids feels like one of the best things we can give them.
building blocks:
(serves 2)
hardboiled eggs (7-8 minute cook)
“big fat, juicy strawberries”
raspberries
pears
bananas
almond butter pretzels
yogurt covered raisins
raw honey
ritz crackers
meat suggestions: salami / pepperoni
“marker” feedback: add pistachios, parmesean cheese + pepperonis
directions:
(5-10 minutes)
start by boiling the eggs (we like ours just past soft-boiled, so around 8 mins is perfect)
after cooling, peel shells, cut in half, sprinkle with kosher salt + cracked pepper, to taste
wash + cut fruit
add pantry staples: pretzels, raisins, crackers of your choosing
a small dish for honey
sprinkle nuts into an open corner on the board(s)
